Greek Lemon Rice

Ingredients
  

Rice and Seasoning
  • 1 cup long-grain rice rinsed and drained
  • 2 cups vegetable broth or chicken broth
  • 1 tablespoon olive oil
  • 1 medium lemon juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon zest for garnish

Method
 

Prepare the Rice
  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the rinsed rice and sauté for about 2 minutes until slightly toasted.
  3. Stir in the vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender and liquid is absorbed.
Fluff and Serve
  1. Remove from heat and let it sit covered for 5 minutes.
  2. Fluff the rice with a fork and stir in the chopped parsley.
  3. Serve warm, garnished with additional lemon zest and parsley if desired.

Notes
