Method
Prepare the Rice
- In a medium saucepan, heat the olive oil over medium heat.
- Add the rinsed rice and sauté for about 2 minutes until slightly toasted.
- Stir in the vegetable broth, lemon juice, lemon zest, oregano, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the rice is tender and liquid is absorbed.
Fluff and Serve
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and stir in the chopped parsley.
- Serve warm, garnished with additional lemon zest and parsley if desired.
