Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 small cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Gyro Assembly
  • 1 cup tomato, diced
  • 1 cup red onion, thinly sliced
  • 1 cup lettuce, shredded

Method
 

Marinate Chicken
  1. In a mixing bowl, whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper. Add chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare Tzatziki Sauce
  1. In a bowl, combine Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
Cook Chicken
  1. Preheat the grill to medium-high heat. Remove chicken from marinade and grill for about 5-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).
Assemble Gyros
  1. Slice the grilled chicken into strips. On each pita bread, layer lettuce, tomato, red onion, and chicken. Drizzle with tzatziki sauce and wrap tightly.
