Ingredients
  

Marinade
  • 500 grams chicken breast cut into cubes
  • 200 grams plain yogurt for marinating
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sauce
  • 2 tablespoons vegetable oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 400 grams canned tomatoes crushed
  • 200 ml coconut milk
  • 1 tablespoon sugar
  • 1 handful fresh cilantro for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine chicken, yogurt, lemon juice, garam masala, cumin, paprika, salt, and black pepper. Mix well and marinate for at least 30 minutes.
Cook the Chicken
  1. Heat a grill pan over medium-high heat. Cook the marinated chicken for about 8-10 minutes, turning occasionally until fully cooked. Remove from heat and set aside.
Prepare the Sauce
  1. In a saucepan, heat vegetable oil over medium heat. Add chopped onion and sauté until golden brown.
  2. Add minced garlic and grated ginger, and cook for another minute.
  3. Stir in coriander, cumin, turmeric, and chili powder. Cook for 1-2 minutes until fragrant.
  4. Add crushed tomatoes and sugar, and simmer for 10 minutes.
  5. Stir in coconut milk and add the grilled chicken. Simmer for another 5-10 minutes.
Serve
  1. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

For a spicier version, increase the amount of chili powder. Serve with basmati rice or naan bread.
