Ingredients
  

Ginger Molasses Cookies
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/4 cup molasses
  • 1 large egg
Eggnog Frosting
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup eggnog
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg for garnish

Method
 

Prepare the Cookie Dough
  1. In a mixing bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  2. In another bowl, beat the butter and brown sugar until creamy. Add molasses and egg, mixing well.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper.
  3. Flatten each ball slightly and bake for 10-12 minutes until edges are firm.
  4. Remove from oven and let cool on a cooling rack.
Make the Eggnog Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add powdered sugar, alternating with eggnog, until smooth and fluffy.
  3. Stir in vanilla extract.
Assemble the Sandwich Cookies
  1. Spread a generous amount of eggnog frosting on the flat side of one cookie.
  2. Top with another cookie, flat side down, to form a sandwich.
  3. Sprinkle nutmeg on top for garnish if desired.
