Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup Parmesan cheese grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
Vegetables (optional)
  • 1 bell pepper cut into chunks any color
  • 1 zucchini sliced

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, minced garlic, grated Parmesan cheese, salt, black pepper, and dried Italian herbs.
  2. Add the chicken cubes to the marinade and mix well to coat. Cover and refrigerate for at least 15 minutes.
Assemble the Skewers
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken onto skewers, alternating with bell pepper and zucchini if using.
Grill the Skewers
  1. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  2. Ensure the internal temperature of the chicken reaches 165°F (75°C).
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving.
  2. Serve warm, garnished with additional Parmesan cheese if desired.
