Ingredients
  

Salad Base
  • 4 cups mixed greens such as arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber sliced
  • 1/4 cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Use a salad spinner to wash and dry the greens thoroughly.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine.
  2. Transfer the salad to a serving bowl and serve immediately.
