Ingredients
  

Pasta
  • 12 oz Fusilli pasta or any pasta of choice
Onion Mixture
  • 3 large Yellow onions thinly sliced
  • 2 tbsp Olive oil for sautéing
  • 1 tbsp Butter for flavor
  • 1 tsp Sugar to help caramelize onions
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
Broth
  • 4 cups Beef broth or vegetable broth for a vegetarian option
  • 1 tbsp Worcestershire sauce for depth of flavor
  • 1 tsp Thyme dried or fresh
Cheese Topping
  • 1 cup Gruyère cheese shredded
  • 1 cup Parmesan cheese grated

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
Caramelize the Onions
  1. In a skillet, heat olive oil and butter over medium heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, for about 20-25 minutes until the onions are caramelized and golden brown.
Prepare the Broth
  1. Add the beef broth, Worcestershire sauce, and thyme to the caramelized onions. Bring to a simmer and let cook for an additional 5 minutes.
Combine and Bake
  1. Preheat the oven to 400°F (200°C). In an oven-safe dish, combine the cooked pasta with the onion broth mixture. Top with Gruyère and Parmesan cheese. Bake for 10-15 minutes until the cheese is bubbly and golden.
Serve
