Ingredients
  

Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup green onions sliced
  • 1 cup kalamata olives pitted and chopped
  • 1 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, green onions, kalamata olives, and feta cheese.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  2. Serve immediately in a salad serving bowl.
