English Muffin Breakfast Pizzas

Ingredients
  

  • 8 large eggs
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
  • 3/4 cup real bacon bits
  • 1/2 cup Heinz chili sauce
  • 6 English muffins
  • 1 1/2 cups shredded mozzarella and cheddar cheese blend

Method
 

  1. Start by cracking 8 large eggs into a medium mixing bowl. Add in 1/4 cup of heavy cream, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of onion powder. Whisk until the mixture is uniform and frothy.
  2. Pour the egg mixture into a lightly greased non-stick sauté pan over medium heat. Gently push the eggs around with a spatula until they are just set but not dry, about 5-7 minutes.
  3. Add in 3/4 cup of real bacon bits to the pan and stir to combine. Remove from heat and set aside.
  4. Slice the English muffins in half and place them cut side up on a baking sheet. Spread a thin layer of Heinz chili sauce on each muffin half.
  5. Spoon the egg and bacon mixture onto each muffin half and sprinkle with 1 1/2 cups of shredded cheese.
  6. Preheat your oven to 400F. Bake the assembled pizzas for about 8-10 minutes or until the cheese is melted and bubbly.
  7. Let the breakfast pizzas cool for a moment before serving hot.
