Ingredients
  

Noodles
  • 8 oz noodles preferably egg noodles or chow mein
Beef Mixture
  • 1 lb ground beef 80/20 blend for flavor
  • 1 tbsp vegetable oil for cooking
  • 3 cloves garlic minced
  • 1 inch ginger fresh, minced
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup brown sugar packed
  • 1 tbsp rice vinegar for acidity
  • 1 tbsp cornstarch to thicken sauce
  • 1 cup green onions sliced, for garnish

Method
 

Cook the Noodles
  1. Bring a pot of salted water to a boil and cook the noodles according to package instructions until al dente.
  2. Drain the noodles and set aside.
Prepare the Beef Mixture
  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
Make the Sauce
  1. In a small bowl, mix together the soy sauce, brown sugar, rice vinegar, and cornstarch until smooth.
  2. Pour the sauce over the cooked beef in the skillet and stir well to combine.
  3. Cook for another 2-3 minutes until the sauce thickens slightly.
Combine and Serve
  1. Add the cooked noodles to the skillet and toss to coat them in the sauce.
  2. Serve hot, garnished with sliced green onions.
