Ingredients
  

Vegetables
  • 2 cups cucumber diced
  • 1 cup sweet bell pepper diced (any color)
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Herbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Vegetables
  1. Dice the cucumbers and sweet bell peppers, halve the cherry tomatoes, and finely chop the red onion.
  2. Place all the prepared vegetables in a large mixing bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetables and toss gently to combine.
  2. Add the chopped parsley and basil, and toss again.
  3. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
