  • 2 large cucumbers sliced
  • 1 cup feta cheese crumbled
  • 1/2 cup red onion thinly sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup fresh parsley chopped
Dressing Ingredients
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced

  • to taste black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine sliced cucumbers, crumbled feta cheese, red onion, cherry tomatoes, and chopped parsley.
  2. Toss the ingredients gently to mix them evenly.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper.
  2. Adjust seasoning to taste.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat all ingredients.
  2. Serve immediately or chill in the refrigerator for 15 minutes before serving.
