Prepare the Ingredients
- Chop the onions, carrots, and celery. Mince the garlic.
- Season the beef short ribs with salt and black pepper.
Sear the Ribs
- In a skillet over medium-high heat, sear the short ribs on all sides until browned, about 3-4 minutes per side.
Combine in Crockpot
- Place the chopped vegetables at the bottom of the crockpot.
- Add the seared short ribs on top of the vegetables.
- In a bowl, mix together the beef broth, red wine, soy sauce, brown sugar, thyme, and rosemary. Pour over the ribs.
Cook
- Cover and cook on low for 8 hours or until the meat is tender and falling off the bone.
Serve
- Remove the ribs from the crockpot and let rest for a few minutes. Serve with the vegetables and sauce.
