Ingredients
  

Chicken and Base
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 4 cups chicken broth low sodium preferred
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 3 cloves garlic minced
Creamy Mixture
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 tbsp Italian seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Pasta
  • 1 cup pasta small shapes like ditalini or elbow

Method
 

Prepare the Soup
  1. Place the chicken, chicken broth, carrots, celery, onion, and garlic in the crock pot.
  2. Stir in the Italian seasoning, salt, and pepper.
Cook
  1. Cover and cook on low for 6 hours or until the chicken is cooked through and tender.
Add Cream and Pasta
  1. Stir in the heavy cream and Parmesan cheese until melted and combined.
  2. Add the pasta and cook on high for an additional 30 minutes, or until the pasta is tender.
Serve
  1. Ladle the soup into bowls and garnish with additional Parmesan cheese if desired.
