Ingredients
  

  • 2 pieces chicken breasts cut into cutlets
  • 2 cups seasoned panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon granulated garlic
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2-3 large eggs
  • 1 can olive oil cooking spray
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • to taste chopped basil and parsley for topping

Method
 

  1. Preheat your air fryer to 390° F.
  2. In a shallow bowl, combine the seasoned panko breadcrumbs, grated parmesan cheese, Italian seasoning, granulated garlic, chili powder, kosher salt, and ground black pepper. In another shallow bowl, whisk together 2-3 large eggs.
  3. Pat the chicken dry, dip into the egg wash, and coat with the breadcrumb mixture. Place on a clean plate.
  4. Spray the air fryer basket with olive oil spray, arrange the chicken cutlets in a single layer, and spray lightly with more olive oil. Cook for 5 minutes, flip, and cook for another 5 minutes.
  5. Spread tomato sauce over each piece of chicken, top with shredded mozzarella cheese, and cook for an additional 2 minutes.
  6. Let the chicken rest for about 5 minutes before serving.
