Method
Cook the Salmon
- Heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper.
- Add the salmon to the skillet and cook for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
Prepare the Sauce
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream, and bring to a simmer. Stir in the spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning.
- Cook for 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper.
Combine and Serve
- Return the cooked salmon to the skillet, spooning the sauce over the top. Cook for an additional 2 minutes to heat through.
- Serve immediately, garnished with extra Parmesan if desired.
