Ingredients
  

Salmon
  • 4 fillets salmon fillets skinless
Sauce
  • 2 tablespoons olive oil for cooking
  • 3 cloves garlic minced
  • 1 cup heavy cream for creaminess
  • 1 cup spinach fresh, chopped
  • 1/2 cup sun-dried tomatoes chopped
  • 1/2 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cook the Salmon
  1. Heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper.
  2. Add the salmon to the skillet and cook for about 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
Prepare the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in the heavy cream, and bring to a simmer. Stir in the spinach, sun-dried tomatoes, Parmesan cheese, and Italian seasoning.
  3. Cook for 3-4 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper.
Combine and Serve
  1. Return the cooked salmon to the skillet, spooning the sauce over the top. Cook for an additional 2 minutes to heat through.
  2. Serve immediately, garnished with extra Parmesan if desired.
