Ingredients
  

Pasta
  • 12 oz tortellini fresh or frozen
Vegetables
  • 2 cups fresh spinach washed and chopped
  • 1 cup cherry tomatoes halved
Dairy
  • 1 cup heavy cream or half-and-half
  • 1 cup parmesan cheese grated
Seasonings
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste black pepper
Oil
  • 2 tablespoons olive oil

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and cook for 3-4 minutes until they start to soften.
Add Spinach and Cream
  1. Stir in the chopped spinach and cook until wilted, about 2 minutes. Pour in the heavy cream and bring to a simmer.
Combine and Serve
  1. Add the cooked tortellini to the skillet and toss to combine. Stir in the grated parmesan cheese and season with Italian seasoning, salt, and pepper. Cook for another 2-3 minutes until heated through.
  2. Serve immediately, garnished with additional parmesan if desired.
