Ingredients
  

Chicken and Orzo
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1 cup fresh spinach chopped
  • 1 cup parmesan cheese grated
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 7-10 minutes.
  2. Remove the chicken from the skillet and set aside.
Prepare the Orzo
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  2. Add the orzo and chicken broth. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is tender.
Combine Ingredients
  1. Stir in the heavy cream, spinach, and cooked chicken. Cook for an additional 5 minutes until heated through and the spinach is wilted.
  2. Remove from heat and stir in the grated parmesan cheese until melted and creamy.
Serve
  1. Serve immediately, garnished with extra parmesan if desired.
