Begin by boiling salted water in a large pot. Once the water is at a rolling boil, add your choice of fettuccine or penne pasta. Cook according to the package instructions until it reaches an al dente texture, about 8-10 minutes. Once cooked, drain the pasta and set it aside.
In a large skillet over medium heat, melt 2 tablespoons of unsalted butter. Season your chicken breasts with salt, pepper, and Italian seasoning. When the butter is bubbling, place the chicken breasts in the skillet. Cook each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet and let rest.
In the same skillet, add the remaining tablespoon of butter and let it melt. Add minced garlic and sauté for about one minute until fragrant. Pour in one cup of heavy cream and stir continuously until it thickens into a sauce.
Slice the rested chicken into bite-sized pieces and return them to the skillet along with the drained pasta. Toss everything gently in the creamy sauce until well-coated.
Plate the creamy cowboy butter chicken pasta and garnish with additional Italian seasoning or freshly grated Parmesan cheese if desired. Enjoy while warm!
