  • 1 can black beans rinsed and drained
  • 1 can corn rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup red bell pepper diced
  • 1 cup avocado diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 clove garlic minced

Method
 

Prepare the Ingredients
  1. In a large mixing bowl, combine black beans, corn, cherry tomatoes, red bell pepper, avocado, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, cumin, salt, black pepper, and minced garlic.
Combine and Serve
  1. Pour the dressing over the bean and vegetable mixture and toss gently to combine.
  2. Serve immediately with tortilla chips or as a side dish.
