Ingredients
  

  • 1 can organic black beans drained and rinsed
  • 2 cups corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 jalapeno finely diced
  • 1/4 cup red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice
  • 1/2 tsp salt
  • fresh black pepper to taste

Method
 

  1. Gather all your ingredients: black beans, corn, red bell pepper, jalapeno, red onion, cilantro, lime juice, salt, and black pepper.
  2. Dice the red bell pepper and jalapeno finely, removing seeds from the jalapeno if preferred.
  3. Drain and rinse the black beans thoroughly to remove excess sodium.
  4. In a large mixing bowl, combine the black beans, corn, diced red bell pepper, jalapeno, and red onion. Fold gently.
  5. Add chopped cilantro and lime juice to the mixture and stir gently to combine.
  6. Season with salt and fresh black pepper to taste.
  7. Taste and adjust seasoning as needed before serving.
