Ingredients
  

Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1 cup carrot shredded
  • 1 cup red onion finely chopped
  • 1 cup parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon honey optional

Method
 

Prepare the Vegetables
  1. Wash and chop all the vegetables as directed.
  2. Place the chopped vegetables in a mixing bowl.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, black pepper, and honey.
Combine and Serve
  1. Pour the dressing over the chopped vegetables and toss to combine.
  2. Transfer the salad to a serving bowl and enjoy!
