Start by chopping your strawberries and banana into bite-sized pieces. In a large bowl, combine the chopped fruit with the Greek yogurt and honey. Gently stir everything together until the fruit is evenly coated in the yogurt mixture.
Line a baking sheet with parchment paper. Using a spoon or a small ice cream scoop, place dollops of the yogurt-fruit mixture onto the parchment-lined sheet. Aim for about a tablespoon per cluster, leaving some space in between each one for freezing. Pop this tray into the freezer for about an hour.
Place dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second increments, stirring between each session until completely melted and smooth.
After an hour, take the frozen yogurt clusters out of the freezer. Drizzle or spoon the melted chocolate over each cluster. Sprinkle chopped roasted and salted peanuts on top before the chocolate sets.
Return the coated clusters to the freezer for another hour or until the chocolate has fully hardened.
