- Preheat your oven to 350°F (175°C).
- Grease a 9x9-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the unsalted butter and light brown sugar. Beat until fluffy and light in color.
- Add the egg and vanilla extract. Mix until well combined.
- Add the fine salt and all-purpose flour. Gently fold until just combined.
- Fold in the mashed overripe bananas.
