Chipotle Chicken Panini Panera

Ingredients
  

Chicken and Marinade
  • 2 cups cooked chicken breast shredded
  • 2 tablespoons chipotle sauce adjust to taste
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon cumin
Vegetables and Cheese
  • 1 cup fresh spinach
  • 1 medium tomato sliced
  • 1 cup pepper jack cheese shredded
  • 4 slices sourdough bread or your choice of bread
Condiments
  • 2 tablespoons mayonnaise optional
  • 1 tablespoon cilantro chopped, optional

Method
 

Prepare the Chicken
  1. In a bowl, combine shredded chicken, chipotle sauce, lime juice, and cumin. Mix well to coat the chicken evenly.
  2. Let the mixture marinate for about 10 minutes.
Assemble the Panini
  1. Lay out the slices of sourdough bread on a clean surface.
  2. Spread mayonnaise on one side of each slice if using.
  3. On the unspread side, layer the marinated chicken, spinach, tomato slices, and pepper jack cheese.
  4. Top with another slice of bread, spread side up.
Grill the Panini
  1. Preheat a grill pan over medium heat.
  2. Place the assembled panini on the grill and press down with a spatula.
  3. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
  1. Remove the panini from the grill and let it cool for a minute before slicing in half.
  2. Serve warm with additional chipotle sauce or cilantro if desired.
