Prepare the Chicken
- In a bowl, combine shredded chicken, chipotle sauce, lime juice, and cumin. Mix well to coat the chicken evenly.
- Let the mixture marinate for about 10 minutes.
Assemble the Panini
- Lay out the slices of sourdough bread on a clean surface.
- Spread mayonnaise on one side of each slice if using.
- On the unspread side, layer the marinated chicken, spinach, tomato slices, and pepper jack cheese.
- Top with another slice of bread, spread side up.
Grill the Panini
- Preheat a grill pan over medium heat.
- Place the assembled panini on the grill and press down with a spatula.
- Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
- Remove the panini from the grill and let it cool for a minute before slicing in half.
- Serve warm with additional chipotle sauce or cilantro if desired.
