Ingredients
  

Chicken and Seasoning
  • 1 lb boneless chicken breast diced
  • 2 tbsp olive oil for cooking
  • 1 tbsp chipotle powder for seasoning
  • 1 tsp cumin for seasoning
  • 1 tsp garlic powder for seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Bowl Components
  • 1 can black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 2 cups cooked rice white or brown
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 cup fresh cilantro chopped
Creamy Sauce
  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chipotle sauce for flavor
  • 1 tsp honey to balance the flavors
  • 1 pinch salt to taste

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine diced chicken with olive oil, chipotle powder, cumin, garlic powder, salt, and black pepper. Mix well to coat the chicken evenly.
  2. Heat a grill or skillet over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes, or until fully cooked and no longer pink in the center.
Prepare the Creamy Sauce
  1. In a small bowl, mix together Greek yogurt, lime juice, chipotle sauce, honey, and a pinch of salt until smooth. Adjust seasoning as needed.
Assemble the Bowls
  1. In each serving bowl, layer cooked rice, black beans, corn, grilled chicken, cherry tomatoes, and avocado slices.
  2. Drizzle the creamy sauce over the top and garnish with fresh cilantro.
