Ingredients
  

Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 celery stalks celery sliced
  • 1 cup spinach fresh or frozen
Legumes
  • 1 can chickpeas drained and rinsed
Noodles
  • 2 cups egg noodles or gluten-free noodles
Liquids
  • 6 cups vegetable broth low sodium
  • 1 tablespoon olive oil
Spices
  • 1 teaspoon thyme dried
  • 1 teaspoon oregano dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Vegetables
  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Stir in the thyme, oregano, salt, and pepper, and cook for another minute.
Cook the Soup
  1. Add the vegetable broth and chickpeas to the pot. Bring to a boil.
  2. Once boiling, reduce heat and let simmer for 15 minutes.
  3. Add the noodles and spinach, and cook for an additional 10 minutes until the noodles are tender.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

Notes
