Chicken Chimichangas

Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 1 cup cheddar cheese shredded
  • 1 cup refried beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup salsa for serving
Chimichanga Wrapping
  • 4 large flour tortillas
  • 2 cups vegetable oil for frying
  • 1 cup sour cream for serving

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded chicken, cheddar cheese, refried beans, cumin, chili powder, garlic powder, and onion powder. Mix well.
  2. Set the filling aside.
Assemble the Chimichangas
  1. Lay a tortilla flat on a clean surface. Place about 1/2 cup of the filling in the center of the tortilla.
  2. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
  3. Repeat with the remaining tortillas and filling.
Fry the Chimichangas
  1. In a frying pan, heat vegetable oil over medium heat until hot.
  2. Carefully place the chimichangas seam-side down in the hot oil. Fry for about 3-4 minutes on each side until golden brown and crispy.
  3. Use tongs to remove the chimichangas from the oil and place them on paper towels to drain excess oil.
Serve
  1. Serve the chimichangas hot with salsa and sour cream on the side.

Notes
