Prepare Chicken and Avocado Mix
- In a bowl, combine the shredded chicken, mashed avocado, lime juice, salt, and black pepper. Mix well until combined.
- Set the mixture aside while you prepare the sandwiches.
Assemble Sandwiches
- Spread butter on one side of each slice of bread.
- On the unbuttered side, layer the chicken and avocado mixture evenly on four slices.
- Top with shredded cheddar cheese and cover with the remaining slices of bread, buttered side up.
Grill Sandwiches
- Heat a skillet or grill over medium heat.
- Place the sandwiches on the skillet and cook for about 3-4 minutes until golden brown.
- Carefully flip the sandwiches and grill the other side for another 3-4 minutes until the cheese is melted.
Serve
- Remove the sandwiches from the skillet, slice in half, and serve warm.
