Ingredients
  

Chicken and Avocado
  • 2 cups cooked chicken breast shredded or sliced
  • 1 medium avocado ripe, mashed
  • 1 teaspoon lime juice freshly squeezed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sandwich Assembly
  • 8 slices whole grain bread
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter softened for spreading

Method
 

Prepare Chicken and Avocado Mix
  1. In a bowl, combine the shredded chicken, mashed avocado, lime juice, salt, and black pepper. Mix well until combined.
  2. Set the mixture aside while you prepare the sandwiches.
Assemble Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side, layer the chicken and avocado mixture evenly on four slices.
  3. Top with shredded cheddar cheese and cover with the remaining slices of bread, buttered side up.
Grill Sandwiches
  1. Heat a skillet or grill over medium heat.
  2. Place the sandwiches on the skillet and cook for about 3-4 minutes until golden brown.
  3. Carefully flip the sandwiches and grill the other side for another 3-4 minutes until the cheese is melted.
Serve
  1. Remove the sandwiches from the skillet, slice in half, and serve warm.
