Ingredients
  

Tortellini
  • 12 oz cheese tortellini fresh or frozen
Beef Filling
  • 1 lb ground beef 85% lean
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
Sauce
  • 1 can enchilada sauce 15 oz
  • 1 cup sour cream
  • 1 cup shredded cheese cheddar or Mexican blend

Method
 

Cook Tortellini
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
Prepare Beef Filling
  1. In a skillet over medium heat, add the ground beef, onion, and garlic. Cook until the beef is browned and the onions are translucent.
  2. Stir in cumin, chili powder, black beans, and corn. Cook for an additional 5 minutes until heated through.
Combine Ingredients
  1. In a large bowl, mix the cooked tortellini with the beef filling and half of the enchilada sauce.
Assemble and Bake
  1. Preheat the oven to 350°F (175°C). Spread a layer of enchilada sauce on the bottom of a baking dish.
  2. Pour the tortellini mixture into the baking dish. Top with remaining enchilada sauce and sprinkle with shredded cheese.
  3. Bake for 20 minutes until bubbly and cheese is melted.
Serve
  1. Remove from the oven and let cool for a few minutes before serving. Enjoy your cheesy beef enchilada tortellini!
