Method
Prepare the Grits
- In a saucepan, bring water (or broth) to a boil. Stir in the grits and salt.
- Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.
- Stir in heavy cream and cheese (if using) until smooth and creamy. Keep warm.
Cook the Shrimp
- In a skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings.
- In the same skillet, add olive oil, then sauté the onion and garlic until softened.
- Add the shrimp and cajun seasoning, cooking until shrimp are pink and opaque, about 3-4 minutes.
- Stir in the cooked bacon and mix well.
Serve
- Spoon the creamy grits onto plates and top with the shrimp mixture.
- Garnish with chopped parsley and serve immediately.
