Method
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Toss in the diced bell pepper and onion. Sauté for about 3-5 minutes until softened.
- Stir in the sliced cajun-style sausage and continue cooking for another 3-4 minutes until the sausage is browned.
- Add the frozen cauliflower rice directly to the skillet and sprinkle in the cajun seasoning. Stir and cook for about 5 minutes until warmed through.
- Taste and adjust seasoning as needed, adding more cajun seasoning, salt, or pepper to your preference.
- Remove from heat and serve in bowls or on plates, garnishing with fresh herbs if desired.
