Ingredients
  

  • 2 bags (10oz) frozen cauliflower rice about 6 cups
  • 1 package (13oz) cajun style andouille sausage sliced
  • 1 large bell pepper diced
  • 1 small yellow onion diced
  • 2 tbsp olive oil
  • 1 tbsp cajun seasoning
  • to taste salt
  • to taste pepper

Method
 

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Toss in the diced bell pepper and onion. Sauté for about 3-5 minutes until softened.
  2. Stir in the sliced cajun-style sausage and continue cooking for another 3-4 minutes until the sausage is browned.
  3. Add the frozen cauliflower rice directly to the skillet and sprinkle in the cajun seasoning. Stir and cook for about 5 minutes until warmed through.
  4. Taste and adjust seasoning as needed, adding more cajun seasoning, salt, or pepper to your preference.
  5. Remove from heat and serve in bowls or on plates, garnishing with fresh herbs if desired.
