Ingredients
  

Noodles
  • 12 oz udon noodles or any preferred noodles
Sauce
  • 4 tbsp unsalted butter cut into pieces
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
Garnish
  • 2 green onions sliced for topping
  • 1 tbsp sesame seeds for topping

Method
 

Cook Noodles
  1. Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions until al dente.
  2. Drain the noodles and set aside, reserving a little pasta water.
Prepare Sauce
  1. In a pan over medium heat, melt the butter.
  2. Add the miso paste, soy sauce, rice vinegar, and sesame oil. Whisk until smooth and combined.
Combine
  1. Add the cooked noodles to the sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  2. Remove from heat and serve immediately, garnished with sliced green onions and sesame seeds.
