Prepare the Spaghetti Squash

- Place the halved spaghetti squash cut-side down on a baking sheet.
- Roast in the oven for 30-35 minutes, or until the flesh is tender.
Make the Buffalo Chicken Filling
- In a mixing bowl, combine the shredded chicken, buffalo sauce, and cream cheese.
- Mix until well combined.
Stuff the Squash
- Once the spaghetti squash is cooked, use a fork to scrape the flesh into strands.
- Mix the spaghetti squash strands with the buffalo chicken filling.
- Spoon the mixture back into the squash halves.
- Top with shredded cheddar cheese.
Bake and Serve
- Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced green onions before serving.
