Ingredients
  

Salad Base
  • 4 cups broccoli florets fresh, chopped
  • 1 cup carrots shredded
  • 1 cup red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup sunflower seeds unsalted
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup for vegan
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the broccoli florets, shredded carrots, diced red bell pepper, chopped red onion, and sunflower seeds.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss until all ingredients are evenly coated.
  2. Serve immediately or refrigerate for up to an hour before serving to allow flavors to meld.
