Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
Filling
  • 2 cups fresh blueberries or frozen, thawed
  • 1 tbsp lemon juice
Topping
  • 1 tbsp granulated sugar for sprinkling
  • 1/2 tsp cinnamon

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Combine Wet Ingredients
  1. In another bowl, mix the melted butter, eggs, milk, and vanilla extract until well combined.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Add Blueberries
  1. Gently fold in the blueberries and lemon juice.
Transfer to Pan
  1. Pour the batter into the prepared loaf pan and smooth the top.
Add Topping
  1. In a small bowl, mix the sugar and cinnamon, then sprinkle over the batter.
Bake
  1. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
