Ingredients
  

Chicken
  • 2 pieces Chicken Breasts boneless, skinless
Salad Base
  • 4 cups Mixed Greens such as spinach, arugula, and romaine
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1/2 cup Red Onion thinly sliced
Dressing
  • 1/4 cup Honey
  • 1/4 cup Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar
  • 1/4 cup Olive Oil
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. Remove from the grill and let it rest for 5 minutes before slicing.
Make the Dressing
  1. In a mixing bowl, whisk together honey, Dijon mustard, apple cider vinegar, and olive oil until smooth.
  2. Season with salt and pepper to taste.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Slice the grilled chicken and add it to the salad.
  3. Drizzle the honey mustard dressing over the salad and toss gently to combine.
  4. Serve immediately.
