Prepare the Pork Tenderloin
- Preheat the oven to 400°F (200°C).
- Season the pork tenderloin with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Sear the pork on all sides until browned, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
Make the Dijon Cream Sauce
- In the same skillet used for the pork, melt the butter over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and Dijon mustard, and cook for 3-5 minutes until the sauce thickens slightly.
- Add chopped thyme and season with salt and pepper to taste.
Serve
- Remove the pork from the oven and let it rest for 5 minutes before slicing.
- Slice the pork tenderloin and serve with the Dijon cream sauce drizzled over the top.
