Ingredients
  

  • 6 cups fresh spinach leaves
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pecans toasted
  • 1/4 cup red onion thinly sliced
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey optional

Method
 

  1. Wash the fresh spinach leaves thoroughly under cool running water and pat them dry. Place the dried spinach in a large mixing bowl.
  2. Slice the strawberries into thin rounds and add them along with the whole blueberries into the bowl with the spinach.
  3. Thinly slice the red onion and toss it into the mixing bowl along with the toasted pecans.
  4. Sprinkle the crumbled feta cheese on top of the mixture.
  5. Pour balsamic vinegar into a small saucepan over medium heat and simmer until reduced by half, about 8-10 minutes. Stir in honey if desired.
  6. Drizzle the balsamic glaze over the salad and gently toss to combine all the flavors.
  7. Serve the salad immediately and enjoy!
