Ingredients
  

Casserole Base
  • 2 cans black beans rinsed and drained
  • 1 can corn rinsed and drained
  • 1 can enchilada sauce red or green
  • 8 tortillas corn tortillas cut into strips
  • 2 cups shredded cheese cheddar or Mexican blend

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine black beans, corn, and half of the enchilada sauce.
  3. In a greased 9x13 inch baking dish, spread a layer of tortilla strips.
  4. Top with half of the bean mixture and sprinkle with a layer of cheese.
  5. Repeat the layers, finishing with tortilla strips, remaining enchilada sauce, and cheese on top.
Bake the Casserole
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving.
