Prepare the Chicken
- Preheat the grill to medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
- Remove the chicken from the grill and let it rest for a few minutes before shredding.
Make the Dressing
- In a mixing bowl, combine ranch dressing, chopped cilantro, and lime juice. Whisk until well blended.
Assemble the Salad
- In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and corn.
- Add the shredded BBQ chicken on top of the salad.
- Drizzle the cilantro ranch dressing over the salad and toss gently to combine.
