Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup mashed ripe bananas about 2-3 bananas
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup milk or dairy-free alternative
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter melted
Filling
  • 1/4 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter softened
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk or dairy-free alternative
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine mashed bananas, sugar, egg, milk, and melted butter. Mix well.
  2. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll and Fill
  1. On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  2. Spread softened butter over the dough, then sprinkle with brown sugar and cinnamon mixture evenly.
  3. Starting from one edge, roll the dough tightly into a log and slice into 8 equal pieces.
Bake the Rolls
  1. Preheat the oven to 350°F (175°C).
  2. Place the rolls on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
Prepare the Glaze
  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle the glaze over the warm cinnamon rolls before serving.
