Ingredients
  

Cajun Salmon
  • 4 fillets salmon skin-on or skinless
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon Cajun seasoning store-bought or homemade
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Avocado Lime Sauce
  • 1 ripe avocado peeled and pitted
  • 1 tablespoon lime juice freshly squeezed
  • 1 clove garlic minced
  • 2 tablespoons Greek yogurt or sour cream
  • 1 tablespoon water to thin the sauce

Method
 

Prepare the Salmon
  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the salmon and season with Cajun seasoning, salt, and black pepper.
  4. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Make the Avocado Lime Sauce
  1. In a blender, combine the avocado, lime juice, minced garlic, Greek yogurt, and water.
  2. Blend until smooth and creamy, adding more water if necessary to reach desired consistency.
  3. Season with salt to taste.
Serve
  1. Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.
  2. Serve the salmon topped with the avocado lime sauce.
  3. Enjoy with your choice of sides, such as rice or a fresh salad.
