Ingredients
  

Salmon
  • 4 fillets salmon skin-on preferred
Cajun Seasoning
  • 2 tablespoons Cajun seasoning store-bought or homemade
Avocado
  • 2 medium avocados ripe
Lime
  • 1 medium lime juiced
Olive Oil
  • 2 tablespoons olive oil extra virgin
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Oven and Salmon
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the Cajun seasoning, olive oil, salt, and black pepper.
  3. Rub the mixture evenly over the salmon fillets.
Bake the Salmon
  1. Place the seasoned salmon fillets in a baking dish.
  2. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Prepare the Avocado
  1. While the salmon is baking, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
  2. Add lime juice and mash gently with a fork. Season with salt to taste.
Serve
  1. Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  2. Serve the salmon topped with the avocado mash.
