Ingredients
  

Salad Base
  • 8 oz rice noodles or any preferred noodles
  • 1 cup red bell pepper thinly sliced
  • 1 cup carrot shredded
  • 1 cup cucumber thinly sliced
  • 1 cup red cabbage shredded
  • 1 cup green onions chopped
  • 1/2 cup cilantro chopped
Ginger-Lime Dressing
  • 1/4 cup lime juice freshly squeezed
  • 2 tbsp soy sauce low sodium
  • 1 tbsp honey or maple syrup for vegan option
  • 1 tbsp fresh ginger grated
  • 1 clove garlic minced
  • 2 tbsp sesame oil or vegetable oil
  • 1/4 tsp red pepper flakes optional for heat

Method
 

Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  2. Set aside in a large bowl.
Make the Dressing
  1. In a small bowl, whisk together lime juice, soy sauce, honey, grated ginger, minced garlic, sesame oil, and red pepper flakes until well combined.
Combine Salad Ingredients
  1. Add the sliced bell pepper, shredded carrot, cucumber, red cabbage, green onions, and cilantro to the bowl with the noodles.
  2. Pour the ginger-lime dressing over the salad and toss gently to combine.
Serve
  1. Serve immediately or chill in the refrigerator for 30 minutes before serving for enhanced flavors.
