Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy, using an electric mixer on medium speed for about 3-5 minutes.
Add the eggs one at a time, mixing well after each addition until fully incorporated.
In another bowl, whisk together the flour, baking powder, salt, and a pinch of cinnamon. Gently fold this dry mixture into your wet ingredients in batches to avoid overmixing.
Slowly mix in half a cup of apple cider into your batter until just combined.
Pour your batter into a greased loaf pan and bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
Prepare a glaze by whisking together one cup of sifted powdered sugar with one to two tablespoons of apple cider and a dash of cinnamon until smooth.
Once the cake has cooled for about ten minutes, transfer it to a wire rack to cool completely. Drizzle the apple cider glaze over the top of the cake.
