Ingredients
  

Pie Crust
  • 1 cup all-purpose flour plus extra for dusting
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water more if needed
  • 1/4 teaspoon salt
Filling
  • 2 cups apple butter store-bought or homemade
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon lemon juice freshly squeezed
  • 2 large eggs beaten
  • 1/4 cup brown sugar packed

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and salt. Add the cold butter and mix until crumbly.
  2. Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
Make the Filling
  1. In a bowl, mix together the apple butter, cinnamon, nutmeg, lemon juice, eggs, and brown sugar until smooth.
Assemble the Pie
  1. Preheat the oven to 350°F (175°C). Roll out the chilled pie crust on a floured surface and fit it into the pie dish.
  2. Pour the apple butter filling into the prepared crust, spreading it evenly.
Bake the Pie
  1. Bake in the preheated oven for 45 minutes or until the filling is set and the crust is golden brown.
  2. Allow to cool before slicing and serving.
