Ingredients
  

Bread and Cheese
  • 8 slices sourdough bread
  • 4 slices cheddar cheese or your favorite cheese
  • 4 slices brie cheese
Filling
  • 1 cup fresh cranberries or cranberry sauce
  • 1 medium apple sliced thin
  • 2 tablespoons honey optional for sweetness
  • 1 teaspoon cinnamon optional
Butter
  • 4 tablespoons butter softened for spreading

Method
 

Prepare the Filling
  1. In a bowl, mix the cranberries, sliced apple, honey, and cinnamon until well combined.
  2. If using fresh cranberries, consider cooking them briefly in a saucepan with a little water until they burst.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of sourdough bread.
  2. On the unbuttered side, layer cheddar cheese, the cranberry-apple mixture, and brie cheese.
  3. Top with another slice of bread, buttered side up.
Cook the Sandwiches
  1. Heat a skillet over medium heat.
  2. Place the sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
  3. Press down gently with a spatula for even cooking.
Serve
  1. Remove the sandwiches from the skillet, slice in half, and serve warm.
