Ingredients
  

  • 1.5 lbs Boneless, Skinless Chicken Breast cut into 1-inch bite-sized cubes
  • 1/4 cup Fresh Lemon Juice
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced finely
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley chopped, for garnish (optional)
  • Lemon Wedges for serving (optional)

Method
 

  1. Begin by cutting the boneless, skinless chicken breasts into 1-inch bite-sized cubes. Toss the chicken into a medium-sized mixing bowl.
  2. In a separate small bowl, whisk together fresh lemon juice, olive oil, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper. Make sure everything is well combined.
  3. Pour the lemon marinade over your chicken cubes and toss them thoroughly until every piece is coated. Let marinate in the refrigerator for at least 30 minutes, up to 2 hours.
  4. Preheat your air fryer to 400°F (200°C).
  5. Arrange your marinated chicken bites in a single layer in the air fryer basket. Avoid overcrowding; cook in batches if needed.
  6. Cook your lemon chicken bites for about 10-12 minutes, flipping them halfway through cooking.
  7. Check on your chicken bites after 10-12 minutes. They should be golden brown and cooked through; use a meat thermometer to confirm they're safe to eat.
