  • 4 cups Arugula

  • 1/4 cup Olive Oil
  • 1/2 cup Walnuts
  • 1 cup Fennel
  • 8 oz Fresh Mozzarella or plant-based cheese
  • 1/2 cup Castelvetrano Olives
  • 1 cup Artichokes
  • 4 oz Turkey slices or chickpeas
  • Lemon Juice and Zest
  • Garlic

Instructions

  1. Cook the farro according to package instructions until tender but still chewy. Drain and let cool.
  2. In a bowl, whisk together olive oil, lemon juice and zest, honey, minced garlic, oregano, and parsley for the dressing.
  3. Chop fennel, artichokes, sun-dried tomatoes, walnuts, olives, and mozzarella into bite-sized pieces.
  4. In a large bowl, combine cooled farro with arugula and chopped ingredients. Drizzle with the vinaigrette and toss gently.
